  7. Serve hot, on flat plates, with fish sauce and lemon slices.

The chef's secret! Do not add water during the suffocation of leek slices. Like any vegetable, leeks have enough water and do not stick to the bottom of the pan.

When the pilaf is cooked / the rice grains are swollen and bind well together, add finely chopped green dill. Mix with a wooden spoon to homogenize the boiled mixture.

Parmesan / smoked cheese is put on a large grater.

Parmesan / grated cheese is added to the pan with pilaf.

The mixture is homogenized using a wooden spoon. Cover the pan with the lid to keep the pilaf warm.

The fresh mackerel is cleaned of scales, the head is cut (it has little meat at all) and it is cleaned inside. The fish is washed under a stream of cold water and swabbed with absorbent paper.

The mackerel is seasoned with coarse salt and freshly ground peppercorns inside and out. The fish is fried whole, in a mixture of fresh butter and extra virgin olive oil.
